Juice was racked clean and inoculated for a cool ferment at 16 deg. Once fermented the base wine was racked and sulphured immediately to retain freshness. Nose: Fresh crunchy green apples, zingy lemon peel and ripe pears dominate with delicate white citrus blossom.
