Here, Gamay on clay limestone and volcanic basalt soils is hand harvested, fermented whole cluster with semi carbonic maceration, spending 12 months in French oak barrels. The result is freshness, purity, and energy. Notes of juicy fruit in cherry and plum are accompanied by a peppery tang, making this an ideal match for a pepper studded salami.
