Lyons Will Estate - Riesling 2024 750ml Size:Single Southern Cross and Riwaka hops"Handpicked on the 19th March 2024. 60% of the fruit was destemmed and left on skins for 10 12 hours before being pressed. The other portion was whole bunch pressed. All fermentation took place in old oak. It spent 5 months in old oak on lees before it was moved to stainless steel for a further month. It was fined with vegan friendly bentonite, racked a few weeks later and put through a gentle pad filter before bottling. In true Lyons Will style this
