It combines Pinot Noir, Chardonnay, Savagnin, Ploussard, Gamay, Trousseau & more old varieties, with 30% of the grapes undergoing direct press and the rest de stemmed and infused into this juice, followed by ageing in tank for 1 year before bottling with no filtration, fining or added sulphur. Beautiful balance of red fruit, spice and earth.
