Finishes dry with a waxy and fresh mouthfeel. 100% Picpoul Blanc from the Bassham Family Organic and Biodynamic vineyard. Destemmed fruit is split between fermenting on skins in open fermenters and pressed juice fermenting in tank. The skin macerated ferments are punched down by hand daily and pressed after 7 days before being married
