Ypresian, 2018 under-25 Aged in fibreglass and bottledRacy and chalky but expressive, this is a terroir driven Blanc de Noirs. Produced from Pinot Noir and Pinot Meunier grapes brown on sand and sandstone with a marly clayey subsoil, the wine spends 11 month in wood, 30 months in bottle, and no dosage. A gastronomic Champagne that belongs with very good oysters.
