Grape variety: St. Laurent 100% carbonic maceration The whole grapes were layered in a 2000 liter full capacity tank, blanketed with CO2, tightly sealed, and left to stand for three weeks without refrigeration, without mechanical extraction, and without fermentationexcept for intracellular fermentation. After three weeks, the wine was pressed in a small basket press and fermented spontaneously in small
