This wine is fermented in stainless steel vats thermostatically regulated to 18ºC for 6-8 weeks

retaining as many whole berries as possible—a process that allows for a portion of semi-carbonic maceration to lift the wine’s aromatic finesse

The fruit is handpicked then whole bunch pressed

Cabernet gives a touch of red currant fruit and mineral structure to balance the fruity floral character of the Cinsault and Grenache

though still somewhat reduced but truly pithy
